Place sausages on a sheet of puff pastry and cut the dough into pieces slightly larger than the sausages. On a parchment-lined baking sheet, add some shredded cheese and place a sausage on top. Cover each sausage with a piece of puff pastry, press the edges with a fork, and brush with beaten egg.

Bake at 400°F (200°C) for about 20 minutes, or until the pastry is golden and crispy.

Let the hot dogs cool slightly before removing them from the parchment so they keep their shape.
